hanger steak

Also known as bistro steak or butcher's tenderloin, it's a cut of meat that hangs from the diaphragm and is not attached to bone. The cut is flavorful, but not as tough as its neighbor skirt steak due to it being supportive muscle. It gets its name "butcher's tenderloin" because there is only one cut per animal and butchers often set it aside for themselves.
